🧁 Salted Caramel Recipe 🧁
Ingredients:
200g (1 cup) sugar
80g (1/3 cup) butter (room temp, non-dairy or any butter of choice)
125ml (1/2 cup) heavy cream (warm, non-dairy or any cream of choice)
1/2 tsp sea salt
Method:
1️⃣ In a sauce pot, melt the sugar over low heat until it turns an amber color, stirring occasionally.
2️⃣ Once sugar is dissolved and golden, stir in the butter gradually.
3️⃣ Slowly pour in the warm cream and let the caramel boil for 1 minute.
4️⃣ Remove from heat, stir in the salt, and let it cool. Store in a heatproof container.
🧁 Banana Cupcakes 🧁
Makes 10-12 cupcakes
Ingredients:
120ml (1/2 cup) unsweetened vegan milk or any milk of choice
1 tbsp white vinegar or lemon juice
225g (1 cup) mashed ripe bananas (about 3-4)
70g (1/3 cup) light brown sugar
100g (1/2 cup) cane/castor sugar
120ml (1/2 cup) oil (vegetable or sunflower)
2 tsp vanilla extract
250g (2 cups) all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon powder
Method:
1️⃣ Preheat the oven to 350°F and line your cupcake tray with liners.
2️⃣ Combine milk, vinegar, mashed banana, oil, sugars, and vanilla in one bowl. Whisk until the sugar dissolves.
3️⃣ Add the dry ingredients and stir until fully combined.
4️⃣ Fill the cupcake liners and bake for 12-15 minutes.
🧁 Cream Cheese Frosting 🧁
Ingredients:
170g (3/4 cup) butter (vegan or any butter of choice)
170g (3/4 cup) cream cheese (vegan or regular)
2 tsp vanilla extract
100g (2/3 cup) powdered sugar
Method:
1️⃣ Whip the butter and powdered sugar with an electric whisk for 5 minutes until fluffy.
2️⃣ Add the cream cheese and vanilla, mixing for 1 minute.
3️⃣ Pipe the frosting onto the cupcakes and drizzle with salted caramel.
