Decided to jump on the air fryer chicken skewer trend with my own version! If you make any of my recipes, this is definitely THE ONE. Serve with some coconut rice or any kind of rice and it’s a truly a delightful bite. Make sure to give this one a try!

- 8 -10 bamboo skewers

- 2 pounds chicken thighs (8), boneless and skinless (cubed into large pieces)

- 1/4 cup full fat coconut milk

- Knob of fresh ginger, minced

- 3 garlic cloves, minced

- 2 tablespoons reduced sodium soy sauce

- 1 tablespoon fish sauce

- 1 tablespoon brown sugar

- 2 1/2 teaspoons yellow curry powder

- 1 1/2 teaspoons turmeric

- 1/2 - 1 teaspoon red chili powder or cayenne pepper, depends on your spice level

- 1/2 teaspoon salt or more to taste

- 1/2 teaspoon black pepper

Peanut Sauce:

- 3 tablespoons peanut butter

- 1 tablespoon reduced sodium soy

- 2 teaspoons brown sugar

- 1 - 2 teaspoons chili garlic sauce, depending on spice level

- 1 garlic clove, minced

- Small knob of fresh ginger, minced

- 1/2 of lime, juiced

- 3 tablespoons hot water, add more until you receive desired consistency

Directions:

1. Start by soaking the bamboo skewers. Next, make the peanut sauce, refrigerate until later use.

2. In a large bowl, combine the cubed chicken with coconut milk, ginger, garlic, soy sauce, fish sauce, and spices. Mix well. Let it marinate for at least 4 hours.

3. Preheat the air fryer. Pile the chicken pieces onto each bamboo skewer equally.

4. Cook a few chicken skewers at a time, I did 3 at a time. Air fry at 400°F for 15 -18 minutes or until fully cooked, turning in between.

5. Finish with peanut sauce, chopped cilantro, cucumber slices, and fresh lime wedges. Serve immediately with sides of choice. Enjoy!
