- 5 egg yolks

- 1/2 cup granulated white sugar

- 2 cups heavy cream

- 2 tablespoons ground coffee

- 1/2 teaspoon salt

- 1 teaspoon vanilla extract

- Boiling water for water bath

Directions:

1. Preheat the oven to 325°F. In a bowl, add egg yolks and sugar. Whisk until a smooth, a pale yellow color forms.

2. Add heavy cream, coffee, and salt to a pot. Warm over low heat for 5 minutes, do not boil.

3. Take the pot off the heat, add vanilla and mix. Cover and set aside to steep for 20 minutes or more.

4. The mixture should be warm. Carefully pour a small amount of the hot cream mixture though a strainer into the egg mixture. Whisk well. Repeat this process until both mixtures are fully combined.

5. Place 6 oz ramekins on a baking tray. Strain the mixture once more and pour into each equally.

6. Create a water bath by filling the tray with boiling water, covering 2/3 of the ramekin. Bake for 45 - 48 minutes, it is done when the custard slightly JIGGLE JIGGLES in the middle.

7. Cool completely in the water bath. After refrigerate the ramekins overnight.

8. When ready to serve, take it out about 5 - 10 minutes beforehand. Add 1 teaspoon of sugar and brulee. Serve immediately and enjoy!
