Crispy spicy sausage, roasted broccoli, and pasta in a creamy cheesy sauce. A quick, delicious, and “healthier” weeknight meal! This is a favorite of mine. Make sure to give this one a try!

- 1/2 box penne pasta

- 3 hot Italian sausage, with the casing off

- Roasted broccoli

- Fresh parsley, chopped

Roasted Broccoli:

- 1 head of fresh broccoli

- Olive oil

- Salt, pepper, and chili flakes.

🥦 Combine everything in a baking pan. Roast at 400°F for 13 to 15 minutes, tossing in between.

Alfredo Sauce:

- 1/4 cup unsalted butter

- 2 to 3 garlic cloves, minced

- 1 cup skim milk

- 1/2 block fat free cream cheese

- 1/2 cup Parmesan cheese

- 1/4 teaspoon black pepper

Directions:

1. Start by cooking your pasta in salted boiling water until al dente.

2. Crumble and cook the sausage until crispy. Take out and set aside.

3. In the same pan over low heat, add butter, melt slightly and add the garlic. Cook until fragrant.

4. Add the milk, cream cheese, and Parmesan cheese. Mix well. Allow it to thicken over low heat.

5. Next, add black pepper to finish off sauce. By this time, the broccoli and pasta should be done. Add those along with sausage into sauce. Combine and cook for a few more minutes.

6. Finish with fresh parsley. Serve immediately, enjoy!
