pack my lunch with me!!

I work at an elementary school, so I’ve had all summer off! I just started my first day back earlier this week, so now I am back in the full swing of things!

I always dread packing my lunch, so having quick snacks and meal prepped meals ready to go is so essential to me!

for my lunch today, I am eating a meal prepped quinoa salad! this is one of my favorite meals.

I found the recipe from Audrey Lillian. you can look up her account, and find the recipe!

the ingredients are:

-quinoa

-sweet potato

-tomato

-onion

-chopped lettuce.

I just pop all of the ingredients into a mason jar, and keep it in my lunchbox. when it’s time to eat, I just put it all into a bowl and microwave! I top with Primal Kitchen ranch, and sriracha sauce.

I like to pack lots of snacks!

I packed some carrots and hummus, a granola bar, popcorn, and an Olipop soda!
