Baked spaghetti squash is super healthy and delicious! I've seen people switch up the recipe using vegan feta too and or adding red pepper flakes to give it a kick! I like it simple though, cut the spaghetti squash in half, scoop out the insides, put the feta in the centers, put tomatoes and olive oil on top. Put in the oven on 400, bake until the squash flesh is tender, and the tomatoes burst! it will take about 50 to 55 mins!
1 medium spaghetti squash
3 tablespoons extra-virgin olive oil
1/4 teaspoon ground pepper
1/8 teaspoon salt
1 (4-oz.) block feta cheese, halved
8 ounces cherry tomatoes (about 1 1/2 cups)
3 tablespoons chopped fresh basil, plus more for garnish
1 tablespoon minced garlic
