Welcome to The Oat-some Recipe Series by OATTIES, where I will share recipes mainly with oats as an ingredient. Today, we are making a super easy recipe, Carrot Cake Baked Oatmeal. It’s a great recipe for breakfast or a healthy snack, apart from our OATTIES Overnight Oats. 😏

🥕 Carrot Cake Baked Oatmeal 🥕
Ingredients
2 cups rolled oats
1 tsp baking powder
1 tsp cinnamon powder
400ml milk
2 eggs
2 tbsp honey
3/4 cup carrot, grated
1/2 cup walnut, chopped
Topping
Greek yogurt + honey
Instructions
▫️Preheat the oven to 190°C.
▫️Prepare a 30x20cm baking dish and mix together the dry ingredients (rolled oats, baking powder, and cinnamon powder) in it.
▫️In a bowl, stir together the eggs, milk and honey.
▫️Add the wet mixture to the dry mixture.
▫️Mix in the grated carrots and chopped walnuts. Mix well, spread evenly and press down.
▫️Bake for around 40-45 minutes, until lightly golden brown.
▫️Let it cool, spread the yogurt mixture on top, and serve!
