Ingredients
1 1/2 cups pecan halves, toasted
1 cup soft caramels, unwrapped
2 tbsp heavy cream
1 cup semi-sweet or dark chocolate chips
1/2 tsp sea salt (optional, for sprinkling)
Directions
Line a baking sheet with parchment paper. Arrange small clusters of 3-4 pecan halves on the sheet.
In a microwave-safe bowl, combine the caramels and heavy cream. Microwave in 30-second intervals, stirring until the caramel is smooth and melted.
Spoon a small amount of melted caramel over each pecan cluster, making sure to coat the nuts. Let the caramel set for a few minutes.
Melt the chocolate chips in a microwave or double boiler until smooth. Drizzle or spoon the melted chocolate over the caramel clusters.
Sprinkle a pinch of sea salt on top of each cluster if desired. Let them cool until the chocolate is set.
Store in an airtight container at room temperature.
