BISCUITS:
• 2 & 1/2 cup of All Purpose flour (i used bread flour)
• 1 tbsp of baking powder
• 2 tsp of sugar
• 1 tsp of salt
MIX and then add
• 1/2 cup of grated frozen butter (break it down with your fingers)
• 1 cup of milk
- mix, and when it’s just barely coming together, throw it onto a nicely floured surface
- gently pat it down, fold it over and repeat folding 5-6 times. this is going to create those nice flaky layers!
- i used a round cookie cutter, make sure to push the cutter all the way down *avoid twisting and turning*
- oil your pan! bake it in a cast iron skillet, keep them close to help rise at 425F for 20 min.
i topped mine with a little unsalted butter, flaky sea salt and a little hot honey!
i doubled my recipe, but this should give you 5-6 biscuits
FRIED CHICKEN:
brine: 2-3 hours or overnight
• 1-2 lbs chicken ( i used thighs)
• 4 cups whole milk
• 1/4 cup salt
• 2 tbsp black pepper
• 8 smashed garlic cloves
• 2 bay leaves
dry mix:
• 2 cups flour
• 2 cups cornstarch
• 1 tbsp of baking powder
• 2 tbsp salt
• 1 tbsp black pepper
• 1-2 tbsp white pepper
• 1 tbsp garlic powder
• 1 tbsp onion powder
• 1 tbsp cayenne pepper
• 2 tbsp paprika
• 2 tbsp chilli powder
MIX
- take 1 cup of seasoned dry mix and 1 cup of COLD water
to create wet batter
- dip the chicken into the wet batter and then into the dry seasoning mix and repeat once so it’s extra crispy
- let the coated chicken rest for 15 min before frying
** Fry at 350F for 8-12 min ,make sure the internal temperature is at 165F**
- Let the fried chicken rest again for 10-15 min before adding your hot honey, paprika, oil/ butter mix and voilà! ✨
