I’ve been making these favourite salmon quinoa sweet potato patties for my toddler since she was a baby. They’re a great way to get her to eat her veggies and protein. Plus, they’re so easy to make! 😋🍠

INGREDIENTS (about 20 patties):
2 cups mashed sweet potato
1 cup cooked white quinoa
1/2 cup shredded cheddar cheese
1 cup cooked ora king salmon, flaked
1 large egg
1/2-1 cup breadcrumbs or panko, as needed
1 tsp each - garlic powder, onion powder, mixed herbs, dried parsley
black pepper, to taste
olive oil, for spraying
METHOD:
1. Steam salmon (15 mins) and sweet potato (20 mins) until cooked through. Flake the salmon and mash the sweet potato.
2. In a large bowl, combine all the ingredients. Mix until well combined.
3. Scoop out about 1 tbsp of the mixture and roll it into a ball, then flatten it slightly. Place them on the lined air fryer tray.
4. Spray the patties with olive oil. Air fry for about 10-15 minutes at 200°C (400°F) or until golden brown.
5. Let the bites cool slightly before serving. Enjoy!
