Ground Turkey Stuffed Sweet Potato

You won’t believe how easy this dinner is! Meal prep friendly, low carb, insanely delicious.

4 large sweet potatoes

Turkey filling:

-ground turkey

-chopped celery

-chopped carrots

-chopped onion

-2 tbsp butter

-1 tbsp arrowroot or potato starch

-½ cup broth

In a large frying pan, add the butter and begin to saute the mirepoix (carrot celery, onion) until fragrant and soft, approximately 5-7 minutes. Add in the ground turkey, season with paprika, garlic powder, salt and pepper. Once the ground turkey is mostly cooked, add in the potato or arrowroot starch and broth. Turn to a low flame and cook until thickened.

Bake sweet potatoes for 25-30m. Spoon the ground turkey mixture in between the sliced open sweet potatoes and serve
