This is a super easy, no measurement, inexpensive dinner recipe! Just 7 ingredients and mostly things that you probably already have in your pantry or fridge.
Step 1: Preheat the oven to 400 degrees. Cut your squash in half. This is actually a lot harder than it looks. A spaghetti squash is very hard before you bake it so make sure you safely use a sharp knife. After cutting in half, season with olive oil, salt, pepper and thyme.
Step 2: Flip the squash over so the outside is facing up.
Step 3: Season your broccoli with olive oil, salt and pepper.
Step 4: Put both the squash and broccoli into the oven at 400 degrees. The squash stays in for 40 minutes and the broccoli for 20 minutes.
Step 5: Take the squash out of the oven and flip. They are going to be very hot, so use caution! Then use a fork to scrape the strands. You will see the spaghetti starting to form.
Step 6: Eat up! I added some cheese on top of my spaghetti squash but that is definitely optional!
This is super low carb, and clean. I would also make this with grilled chicken or chicken meatballs for some added protein! I LOVE how satisfying and easy this recipe is. My family used to make it during the pandemic quarantine so it’s really such a comfort meal for me.
