if u r looking for a quicky n easy yet flavourful comforting katsu curry recipe to satisfy your cravings LOOK NO FURTHER!!! Even though im using chicken breast, its still SO JUICY N TENDER!!!! Honestly i dont have many exact measurements cus i usually just add however much i feel is right HAHHAHA…. MAKE THIS DISH FOR UR FAMILY OR PARTNER N THEY WILL DEFO LOVE U 100000 TIMES MORE😩😩

Time allocation⏰:

- Rice (5 mins to wash and 25 mins to cook while preparing the curry n katsu)

- Ingredients prep (10 mins)

- Curry (10 mins)

- Katsu (15 mins)

Ingredients🥕🧅🧄:

- Rice🍚

- Curry cubes🍛

- Sliced onion🧅

- Minced garlic🧄

- Roughly chopped carrots🥕

- Chicken breast🐓

- Garlic powder🧄🧂

- Onion powder🧅🧂

- Salt and pepper🧂

- Egg🥚

- AP Flour🫙

- Panko🍞

- Cheese🧀 (optional)

Steps:

1. Start cooking the rice

- While the rice is cooking u can prep all ur other ingredients!!

2. Thinly slice the onions, mince the garlic and roughly chop the carrots. Also cut the chicken breast in half horizontally to get two thin steaks that cook easily so u dont have to worry abt getting salmonella💀💀💀

- At this stage, i like to soak my chicken fillets in some milk and mirin to get rid of the chickeny taste iykyk n to make the chicken more tender. BUTTT its totally optional!!

3. Add about a tb of oil into the pan n caramelise the onion and garlic till its fragrant!! Then toss in the carrots n stire fry for a few mins!!!

4. Add in the amt of water as stated in the curry cubes packaging into the pan n bring the water to a boil!

- I usually like to simmer the veggies in the water till the carrots get a little soft so thats it wont b too hard!!

5. Add in your desired number of curry cubes and lower the heat to let the curry simmer till its thick

6. Once its done, set it aside and time to get started on the chicken katsu!!!

7. Take the chicken katsu, pat them dry, n set them aside.

- This is impt to make sure all the seasoning sticks well!!

8. Time to prepare the wet batter (my secret to getting juicy n flavourful katsus!)

9. Mix one large egg, 1 and a half tb of AP flour, 1tsp of salt and pepper, 1 tsp of garlic and onion powder in a wide bowl to form the wet batter.

10. Prepare a plate with some panko breadcrumbs.

11. Dip the chicken fillet into the wet batter then into the breadcrumbs N MAKE SURE TO LEAVE NO BALD SPOTS for maximum crispiness😍😍😍

12. Then heat up a pan with around 3cm depth of neutral oil at low-med heat, dip ur wooden chopsticks or some batter in the oil, once it starts bubbling the oil is hot enough for the chicken to be added!

- Dont b impatient n immediately heat the pan to high heat as ur katsus may burn easily but still b raw on the inside!!!

13. Add the chicken fillets into the hot oil and cook for around 6 minutes or till the chicken katsus are golden brown!

14. Then let the chicken katsus rest over some paper towels to drain the oil and reheat the curry over the stove!

15. Then assemble the rice, curry and katsu N TOP IT OFF WITH SOME CHEESE!!!! to get the best katsu curry rice u have ever tasted in ur life!!

Pro tip!!! if u have more time to spare make some garlic fried rice to have with the katsu curry… AFT EATING THIS COMBI U WILL B TELEPORTING TO ANOTHER UNIVERSE CUS ITS JUST THAT GOOD😩😩😩😩
