Cooking dinner every night used to feel like a chore I couldn’t handle. Especially after a long day of work.
But, when I started my health journey, I committed to making dinner just about every night. The key to sticking with it was SIMPLICITY.
All of these dinners are quick and easy and therefore don’t feel like a chore at all. I’ve learned to love cooking over the years and I can’t wait to share more of my favorite nourishing meals.

1. Chicken & Mushroom- This dish is all made in this one pan. (Yay less dishes)
2. Avocado Pesto- With a few simple ingredients you can make homemade pesto. And it takes less than 30-minutes!
3. Chipotle Chicken Stew- Another 1 pot meal. This one has a kick if you love spicy food like me 😉
4. 2-Ingredient Juicy Chicken- This is just pesto + oil baked on top of chicken. It is SO easy yet so delicious.
