Malaysian late night snack: Benjo

🔹 Did you know that Egg banjo is a popular British military snack? It is commonly made with heavily buttered thick sliced bread, fried runny eggs and ketchup. Sounds familiar?

🔹 In Malaysia, our Egg banjo or ‘Roti benjo’ is eaten with the burger bun and a perfectly cooked fried runny egg in the middle. If you don’t fancy meat, you can have this instead. Let’s start:

🔹Ingredients:

❣️Egg

❣️Burger buns

❣️Slice cheese

❣️Mayonnaise

❣️Lettuce

🔹 Steps

❣️ Slice your burger bun

❣️ Spread some butter

❣️ Pan fry your buns u til golden brown

❣️ Place a slice of cheese and let it melt on the bun

❣️ Add a bit of oil to grease the pan and fry your egg.

❣️ Assemble your burger: start by spreading some mayonnaise on the bun with the melted cheese

❣️Add some shredded lettuce

❣️Place your egg on top

❣️ Place the top bun and enjoy

🔹 Of course there are various versions when it comes to Roti Benjo and this is my simplest version; just as good and most importantly: quick and easy to make. Definitely suitable for kids too ❣️
