Baba ghanoush made from summer squash!

Summer Squash is a plenty right now!

I had a bunch from the local GR food club and it occurred to me to replace the eggplant of baba ghanoush with summer squash and it tasted so yummy!

1. Cut up squash and cook it in oil on pan.

2. Put fried squash in food processor with tahini, lemon, water, garlic (optional), and salt to taste!

3. Blend until smooth!
