This is always a hit with our kids! (3 and 4 years old)
➡️ Ingredients
• 14 oz kielbasa sausage (any kind)
• Veggies of your choice - I usually do a couple potatoes (russet or sweet), 1 or 2 bell peppers, a small zucchini or yellow squash and an onion
• Olive oil
• 1/2 t pepper
• 2 t paprika
• 2 t thyme
• 2 t garlic powder
➡️ Directions
1. Preheat oven to 375°, line a large sheet pan with foil, spray with nonstick cooking spray, set aside.
2. Chop potatoes into bite size pieces, toss with 1 T oil, 1 t paprika, 1 t thyme and 1 t garlic powder. Place on baking sheet, bake for 12-15 minutes until starting to get soft.
3. While potatoes are baking, slice kielbasa and chop remaining vegetable into bite size pieces. Toss with 1-2 T of olive oil and remaining seasonings.
4. Take potatoes out of oven, add sausage and veggies to pan, stir together.
5. Bake for 10-20 minutes or until potatoes are easily pierced with a fork.
6. I always put the oven on broiler for about 2-3 minutes after potatoes are soft to crisp everything up a bit, but this is totally optional!
