Southwestern Goulash 🍅🌽

This is always a hit with our kids (4 and 3) and we already have leftovers for lunch the next day!

➡️ Ingredients

• 1/2 C uncooked elbow noodle pasta

• 1 lb ground beef

• 1 medium onion, diced

• 1 can diced tomatoes (15 oz)

• 1 can black beans, drained

• 2/3 C frozen corn

• 8 oz can tomato paste

• 4 oz can green chilis

• 1/2 tsp ground cumin (or 1 tsp for more kick)

• 1/2 tsp pepper

• 1/2 tsp salt

➡️ Directions

1. Cook pasta according to package directions.

2. In large pot, cook onion and beef until no longer pink.

3. Add remaining ingredients, including cooked pasta, stir together.

4. Bring to boil, reduce heat and simmer 3-4 minutes or until heated through.

5. Tastes great with cornbread!
