One of the challenges in bringing your cookie ideas to life can be creating the perfect colors. Here are a few things I’ve learned when it comes to coloring your icing, specifically for royal icing.
✔️ Use Gel Coloring
Gel food coloring is more concentrated than liquid color, so you can use less. Gel coloring is important for coloring royal icing and other baked goods because adding too much liquid can alter the icing too much.
✔️ Let the Icing Color Develop
Icing can take some time for the color to develop. If you’re aiming for a really deep or rich color, adding more gel isn’t always the answer. Let the icing sit for a while to see how the color deepens and then add more gel if needed.
✔️ Build Colors Off of Each Other in Your Mixer
It can be a pain to make and mix each color individually, cleaning between colors, but you don’t always have to! For these cookies, I made enough icing base for yellow and orange. I colored the icing yellow, filled the piping bag with what I needed, and then added red to make the rest of the icing orange.
