As a mom and ADHD girlie, I’ve been on a journey of learning and adapting, and today I’m sharing one of my go-to quick meals: “Sub in a Tub.” It’s basically all the deliciousness of a sub without the bread—perfect for those days when you need something tasty and satisfying but don’t have the energy or time to make a big meal.

This one has shredded lettuce, salami, pepperoni, ham, provolone cheese, banana peppers, olives, onions, salt, pepper, and Italian seasoning. I tossed it all together with a dressing made of mayonnaise and red wine vinegar. Super simple, and it’s a lifesaver when I’m busy and need to feed myself and my daughter something nourishing.

I was only diagnosed with ADHD because my daughter was diagnosed a couple of years ago. It was like looking in a mirror and seeing so many things that finally made sense. I knew I needed to model healthy habits for her, but first, I had to learn them for myself. I’m still figuring it out—what works, what doesn’t, and how to thrive with this diagnosis.

Meals like this are part of that journey. I used to go all day without eating, feeling weak and frustrated, and wondering why I couldn’t get anything done. It turns out, I just wasn’t fueling my body. I’ve realized that a quick, nutritious meal is better than skipping meals altogether.

If you’re in the same boat, ADHD girlie, motherhood, or both remember: we don’t have to do everything perfectly. A quick meal like “Sub in a Tub” can keep us going, and it’s a small way to take care of ourselves while we take care of everyone else. ADHD can be both a superpower and a challenge, but with a little practice and self-compassion, we can find balance. 💛
