Cucumber Street Corn Salad

What’s more refreshing than a cold cucumber salad? Not much! This one combines cucumbers with the refreshing crunch of fresh corn, very reminiscent of Mexican street corn. It’s really easy to make, here’s how we do it!

Mix together the following in a bowl: 2 tablespoons of both mayo and sour cream, the juice of 1 lime, 1 teaspoon chili powder, a generous sprinkle of garlic powder, and some cotija or queso fresco cheese (measure with your heart on this one).

Next add in 2 cups of thawed corn or 2 ears of fresh corn, 3 sliced cucumbers, cilantro, and red onion if you’d like. Mix this together and season with salt and pepper to taste!
