Welcome to my first video where I show you how to use seasonal produce for March! Today’s recipe features potatoes in this simple, 5 ingredient crock pot meal. You’ll need 4 thick cut pork chops, 2 pounds of quartered baby red potatoes, a pack of ranch seasoning (or 2 tablespoons), a generous drizzle of olive oil, and 3 tablespoons of butter.

First lay your quartered potatoes to the bottom of the crockpot. Drizzle with olive oil and the ranch packet and toss to combine. Next lay your pork chops on top of the potatoes. Add the chunks of butter on top and that’s it! You’ll cook this on high for 3 hours or low for 5-6 hours or until the pork chop internal temperature is 145 degrees. I liked to stir this up every once in a while to make sure the potatoes weren’t burning.
