Sharing my go to wfh meal that I’ve been making too much of in the past few weeks. It’s super easy to make, fuss free, and really tasty and comforting!
Ingredients (for 1 pax):
〰️ 1 tomato, diced
〰️ 1 egg
〰️ Chinese spinach (sharp head)
〰️ Half block of Tofu
〰️ 1 tbsp dashi powder
〰️ Protein of choice
〰️ Carbs of choice
Directions:
➖add diced tomatoes to pot, and stir fry for 3-5mins till it turns into a purée like consistency
➖ add water and dashi powder in to the pot to boil
➖once broth comes to a boil, drop beaten egg into the soup through a sieve or a fork (I used a fork here, super fuss free!)
➖ proceed to dump in all other ingredients!
Voila! My favourite lunch to cook as it’s one pot and really delicious. Probably takes 15 minutes max from prep to cook time. 😊
