Not that anyone noticed I was gone 😂
but I went on a fun little trip to Colorado 🏔️
& I loveddddd it! it was my second time going but I went to a whole new area, making it a totally different experience. It was great! 🥰
Anywaaayyys, here is the shrimp & broccoli recipe from my meal prep post! 😋
🛒 Ingredients 🛒
• 1lb shrimp 🍤
• 2 tbsp butter 🧈
• 1 tbsp minced garlic 🧄
• 1 tsp italian seasoning
• 1/4 tsp onion powder
• 2 tbsp vegetable stock
• salt & pepper 🧂
• 1/4 teaspoons paprika
• red chili flakes 🌶️
• lemon juice 🍋
• 1 large head of broccoli 🥦
• parsley 🌿
👩🏽🍳 Instructions 👩🏽🍳
1. Preheat oven to 425*F & cut two sheets of aluminum foil
2. In a small bowl mix together shrimp, Italian seasoning, onion powder, salt, pepper, & paprika. Mix really well until all shrimp is completely coated.
3. Divide shrimp into center of each aluminum foil & place broccoli pieces right next to shrimp.
4. Sprinkle minced garlic over. Pour lemon juice on top. Add salt, pepper, & crushed red chili flakes. Cut pieces of butter & lay evenly on top in each foil packet. Add vegetable stock
5. Close foil leaving a little open to allow heat circulation.
6. Bake for 15 minutes; if desired more crunchy broil for 3-5 minutes after
7. Garnish with parsley & lemon wedges
8. Serve over rice or whatever you chose & enjoy 😋
