Nothing gets me motivated to bake at 8pm like needing to use up leftover food that’s about to spoil… This ended up being a delicious bedtime snack.
Ingredients:
1/3 cup unsweetened cocoa powder
1 1/3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup white sugar
1/2 cup brown sugar
2 TBSP maple syrup
1/3 cup melted chocolate
1/2 cup ghee (or butter/oil of your choice)
2 large eggs
1 tsp vanilla extract
1 large zucchini
2 overripe bananas
Chocolate and walnuts for topping
Instructions:
1. Preheat oven to 350 degrees
2. Shred zucchini + mash bananas (I personally threw them into my high power blender with the wet ingredients)
3. Mix all wet ingredients first
4. Mix dry ingredients in a separate bowl and fold into the batter
5. Pour batter into loaf pan and top with chocolate chunks + walnuts (or topping of your choice)
6. Bake in oven for approximately 50-60 minutes
7. Let cool completely before slicing
