they’re not enough recipe posts on lemon8 D:< so today i decided to share my comfort supper food that i’ve been eating since i was a kid! before we start guys don’t be fooled by the picture i promise it tastes way better than it looks… I’M JUST BAD AT PRESENTATION OKAY AND MY HOUSE HAS BAD LIGHTING….

moving on to the dish, my mum used to make this for my siblings and i whenever we were hungry at night and as i grew older i learnt how to make it for myself! it’s noodles in a clear, warm and comforting broth that’s not only healthy but takes only about 15mins to make! here are the steps! ⬇️

step 1: bring some water to a boil (as much as the amount of soup you can finish!)

step 2: add in your choice of noodles! my go to noodle choice is rice vermicelli (beehoon) because it goes best with the soup and ingredients. i used brown rice vermicelli for this but any works fine!

step 3: add your choice of seasoning! i use this vegetarian mushroom seasoning because its healthier yet tastes so good without over salting your food. i add about two and a half teaspoons for about a quarter pan of water (see pic 1). you can get it at your nearest ntuc or online ;)

step 4: ADD VEGGIES!! i’m sure i don’t need to remind you guys that veggies are important in so many ways and according to google, “vegetables and fruits can lower blood pressure, reduce the risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and have a positive effect upon blood sugar” so DON’T SKIP YOUR VEGGIES 😤 any leafy vegetable goes well but my favourite is caixin <3

step 5: time to add other ingredients! 😋😋 for this, i added toufu, enoki mushrooms, and sichuan vegetables for flavour. you can add anything you like but i usually just grab whatever i have in my fridge like fishballs, tomatoes, mushrooms etc. avoid adding unhealthy stuff like luncheon meat and sausages or it will defeat the purpose of a healthy supper >:(

step 6: RUNNY EGG!!! the trick to this is to add the egg JUST before you turn off the fire, then letting it sit in the soup for a min! make sure that the whole egg us immersed in the hot soup though. if the liquid is too shallow to cover the whole egg, you can pile up all the noodles and ingredients over the egg or prop the pot up with something so that all the soup flows to one side. works for me ALL the time

step 7: add any other toppings of your choice like chilli or spring onions. i usually add parsley, chilli padi, fried onions and if i’m feeling like it, a dash of sesame oil 🤤 TASTES SO GOOD omg i’m gettinghungry just thinking about it 🥲

anyways guys definitely try this out! its great for a quick supper and as an alternative for maggie or cup noodles that’s actually super bad to eat right before you sleep… (actually they’re super bad any time if the day but im sure we all know that) NOT SAYING that i never eat maggie but why not just put in a little more effort to be healthier while filling your tummy at the same time right?? hope yall try this and like it as much as i do 💕
