A tropical delight with layers of soft white chocolate cake and pineapple, topped with creamy frosting.
Ingredients:
2½ cups all-purpose flour
2½ tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
1 cup granulated sugar
4 large eggs
2 tsp vanilla extract
1 cup whole milk
1½ cups crushed pineapple, drained
1½ cups white chocolate chips, melted
3 cups white chocolate cream cheese frosting
1 cup pineapple chunks (for topping)
Directions:
Preheat Oven: Heat to 350°F (175°C). Grease and flour three 9-inch round cake pans.
Mix Dry Ingredients: Whisk together flour, baking powder, and salt.
Cream Butter & Sugar: Beat butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla.
Combine: Gradually mix in the dry ingredients, alternating with milk. Fold in crushed pineapple and melted white chocolate.
Bake: Divide batter among pans and bake for 25-30 minutes. Cool in pans for 10 minutes, then transfer to wire racks.
Assemble: Frost the top of the first cake layer, add the second, and repeat. Frost the top and sides of the cake, then top with pineapple chunks.
