INGREDIENTS
* Around 1 lb. boneless, skinless chicken breasts
* 1 small onion – white or yellow
* 3-4 medium carrots
* 1-2 stalks celery
* 3 cups of fresh baby spinach
* As many garlic cloves as your heart desires
* Chicken broth or stock
* 2 tbs Cornstarch & 2 tbs cold water
* Two (12 ounce) cans evaporated milk
* One 1 lb. package dried potato gnocchi
* Seasonings: dried basil, Italian seasoning, salt & pepper
INSTRUCTIONS
1. First, add chicken, veggies, seasoning, and broth to crockpot.
2. Cook for 6-8 hours on low or 4-5 hours on high, then shred the chicken.
3. Add a cornstarch/water mix, evaporated milk, and the uncooked gnocchi to the crockpot & recover and cook for another 20-30 min.
4. Just before serving add spinach to the crockpot and let wilt for about 2-3 min. Taste and season with additional seasoning.
5. Serve & enjoy!! 😋
