Low-Calorie Chicken Piccata is the ultimate “marry me” meal for the clean girl who loves a fresh, bright luxurious dinner that’s light but still impressive!According to my husband the night I made chicken piccata for us he felt at home with me, relaxed, cozy, and his tummy was happy. We spent the evening cozy on the couch with full bellies and enjoyed each others company. My husband loves lemon so I had to hook him with the zesty lemon and caper sauce which makes this dish feel fancy but is wholesome and easy to make. 🌿✨

Ingredients:

• 2 boneless, skinless chicken breasts

• 2 tbsp olive oil

• 1/4 cup low-sodium chicken broth

• 1/4 cup fresh lemon juice (about 1 lemon) 🍋

• 2 tbsp capers, rinsed

• 2 garlic cloves, minced

• 1/4 cup almond flour (or whole wheat flour)

• Fresh parsley for garnish 🌿

• Salt and pepper to taste

• Lemon slices for garnish/ char for smokiness🍋

Instructions:

1. Place each chicken breast between two sheets of plastic wrap and pound to an even thickness (about 1/2 inch). Season both sides with salt and pepper, then lightly coat with almond flour.

2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the chicken breasts on both sides until golden and cooked through (about 4-5 minutes per side). Remove and set aside.

3. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté until fragrant (about 1 minute). Stir in chicken broth, lemon juice, and capers. Let the sauce simmer for 2-3 minutes until slightly reduced.

4. Return the cooked chicken to the skillet, spooning the sauce over it. Let the chicken soak up the flavors for a couple of minutes. Garnish with fresh parsley and lemon slices before serving.
