You won't believe how simple these blueberry scones are! Here's what you need:
- 2 cups all-purpose flour 🌾
- 1/3 cup sugar, plus extra for topping 🍬
- 1 tablespoon baking powder 🥄
- 1/2 teaspoon salt 🧂
- 6 tablespoons cold, cubed unsalted butter 🧈
- 3/4 cup heavy cream, plus extra for brushing 🥛
- 1 large egg 🥚
- 1 teaspoon vanilla extract 🍦
- Zest of 1 lemon 🍋
- 1 cup frozen blueberries 🫐
Recipe Steps:
1. Preheat oven to 400°F and line a baking sheet.
2. Mix flour, sugar, baking powder, and salt.
3. Blend in butter until crumbly.
4. Combine cream, egg, and vanilla; mix into dry ingredients.
5. Fold in lemon zest and blueberries gently.
6. Shape dough into a disc, cut into wedges.
7. Place on baking sheet, brush with cream, sprinkle with sugar.
8. Bake 20-25 minutes until golden.
