You’re going to want to save this for next week! This simple pasta dish is full of flavor & it’s so easy, making it perfect summer BBQs + dinner parties! I have made this with chicken in the past, but this time I added some garlic herb butter shrimp to change it up. Both versions are delicious; you could also have the pasta without added protein as a side dish for grilled steak! Baking dish & blates linked on my LTK.
My recipe is for 2 adults + our 3 year old & we had 1 serving of leftovers for lunch the next day.
Ingredients:
8 oz of your favorite pasta (I like farfalle)
1/4 cup Fresh Basil, roughly chopped
2 TBSP Fresh Garlic, chopped
Salt / Pepper to taste (go easy on salt because Feta is salty)
3 tsp Dried Oregano
8 oz Cherry Tomatoes
1 - 8 oz Block of Feta
1/3 cup of Olive Oil / divided
16 oz. shrimp
2 TBSP Garlic Herb Butter
Instructions:
Preheat oven to 400 degrees
In an oven-proof baking dish, add the cherry tomatoes, chopped garlic, half of the olive oil, a pinch of salt, pepper, & 2 tsp of dried oregano. Mix well.
Place the whole block of feta cheese in the center of the baking dish, surrounded by the tomatoes.
Pour the remaining olive oil & 1 tsp of dried oregano over the feta cheese
Bake the tomatoes & feta in a pre-heated oven at 400 degrees for 30 minutes
Start pasta water to boil
Cook shrimp or desired protein accordingly. I cooked our shrimp in garlic herb butter before tossing them in the pasta/tomato/cheese mixture
Meanwhile, add pasta to boiling water & cook according to the package instructions
After approximately 30 minutes, cherry tomatoes should be blistering & cracking. Remove the baking dish from the oven & let rest for 5 minutes before using a spoon to break up & mix the cheese to combine with the tomatoes.
Add the roughly chopped fresh basil & mix again. Add the cooked pasta & stir well to combine. Taste & adjust the seasoning as desired, I didn't need to add anything.
