Eating healthy on a budget is a great way to improve your overall wellness. When you eat healthy foods, you give your body the nutrients it needs to function at its best.
Finances can be a big barrier when it comes to eating healthy.
If you are a college student, have a big family, or just don’t want to spend a lot of money on your food, then having a weekly budget is essential for success.
Eating healthy on a budget is not always easy, but it is definitely possible. With a little planning and effort, you can eat healthy foods without breaking the bank.
One way to eat healthy on a budget is to cook at home more often. This allows you to control the ingredients in your food and save money on eating out.
Another way to eat healthy on a budget is to buy in-season fruits and vegetables. These are often less expensive than out-of-season produce.
You can also find healthy recipes online or in cookbooks. There are many recipes that are budget-friendly and delicious.
Here is a recipe I made for a healthy and balanced summer BBQ that costs less than $25 and serves 4 people:
Chicken Shawarma Platter
Ingredients:
1 whole wheat pita ($1.99)
1 package of shawarma chicken thighs ($10.56)
1 package of cremini mushrooms ($2.69)
1 package of cut veggie kabobs ($5.99)
1 lemon ($0.99)
Optional: 1 jalapeño ($0.99)
Total cost: $23.50
Instructions:
Preheat your grill to medium-high heat.
Grill the chicken thighs for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
While the chicken is grilling, drizzle the mushrooms and veggie kabobs with olive oil, sprinkle with salt and pepper, and place them on the grill. Cook for 8-10 minutes, turning occasionally, until the veggies are tender and slightly charred.
Slice the grilled chicken thighs into strips. Arrange the chicken, mushrooms, and veggie kabobs on a serving platter. Squeeze fresh lemon juice over the chicken and garnish with optional jalapeño.
Warm the whole wheat pita on the grill for a minute or two. Serve alongside the platter, allowing your guests to create their own shawarma wraps.
This recipe is a great way to get a healthy and balanced meal without breaking the bank. It is also easy to make and can be customized to your liking.
I hope you enjoy this recipe!
