Hey Lemon8 friends looking for a delicious and easy dinner that practically cooks itself? This Crockpot Pepper Steak is a flavorful, tender meal that will have everyone at the table asking for seconds! Simply throw everything in your slow cooker and let it work its magic. 😋🍲

Ingredients:

1.5 lbs beef sirloin or flank steak, sliced into thin strips

1 large green bell pepper, sliced

1 large red bell pepper, sliced

1 large yellow bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

1 cup beef broth

1/2 cup soy sauce

1/4 cup hoisin sauce

2 tbsp cornstarch

2 tbsp water

2 tbsp vegetable oil

1 tsp ground ginger

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional, for extra heat)

Cooked rice (for serving)

Instructions:

Prepare the Beef:

Heat vegetable oil in a skillet over medium-high heat. Sear the beef strips until browned on all sides (about 2-3 minutes per side). Transfer to the crockpot.

Combine Ingredients:

In the same skillet, add sliced onions and bell peppers. Sauté for about 3 minutes until slightly softened. Add minced garlic and cook for an additional 1 minute. Transfer to the crockpot.

Make the Sauce:

In a medium bowl, whisk together beef broth, soy sauce, hoisin sauce, ground ginger, black pepper, and red pepper flakes (if using). Pour the sauce over the beef and vegetables in the crockpot.

Cook:

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.

Thicken the Sauce:

About 30 minutes before serving, mix cornstarch and water in a small bowl to create a slurry. Stir the slurry into the crockpot. Cover and cook on high for an additional 30 minutes, until the sauce has thickened.

Serve:

Serve the pepper steak over cooked rice.
