Something to bake on Sunday 🍵🤍 Matcha Avocado Blueberry Muffin

🍵 Recipe:

240g all purpose flour

1/2tsp baking powder

1/2tsp baking soda

1/4tsp salt

6g ceremonial matcha

1 ripe avocado, mashed

150g white sugar

1tsp vanilla extract

250-300g frozen blueberries

1 egg

200g yogurt

50g milk of choice

Streusel topping

30g melted butter

20g oat flour or wheat flour

20g white sugar

1. Mix together dry ingredients and set aside.

2. Mix all the wet ingredients together, mash avocado separately then add to the mixture.

3. Add blueberry to the dry ingredients to coat the blueberry (so the blueberry will not sink while baking).

4. Mix everything together and scoop into muffin trays.

5. To make the streusel topping, melt butter and mix with flour and sugar. Top over the muffins.

6. Bake in the oven at 190c/375f for 25-30 minutes or until the chopstick comes out clean.

7. Let them cool down before eating along with your favorite matcha latte. Enjoy 😘
