Ingredients:
Skin on Chicken Thighs
Tony’s Cajun Seasoning
Garlic Powder
Onion Powder
Pepper
1. Clean Chicken (cut out any extra things that don’t belong).
2. Season both sides.
3. Place in a ziplock bag.
4. Pour in some chimichurri (see below for ingredients) and marinate the chicken in that overnight.
5. Cook chicken on a grill top (stove use); make sure to not cook chicken all the way through. Enough to where each side has a nice crispy layer.
6. Remove from stove top grill; place chicken into a cast iron skillet.
7. Place in the oven at 350 and cook until internal temperature meets 165.
8. Plate and add extra chimichurri over chicken (optional).
9. Serve with rice and your favorite veggie.
10. Enjoy!
Chimichurri Ingredients
1 cup of Olive Oil
2 Cups of Chopped Red Onion
2 Bundles of Cilantro
1 Cup of fresh Parsley
1 1/2 Tsp Minced Garlic
1 Jalapeño (I left seeds in)
1/2 Lime (Lime Juice)
Sea Salt ( to taste)
1. Dice Parsley, Cilantro, Red Onion, and Jalapeño.
2. Add all items into a jar or bowl.
3. Mix well.
