I LOVE soup, I can eat soup every day, 365 days a year! It’s still a little chilly in KY so decided to throw together a super simple stuffed pepper soup 😋

🫑INGREDIENTS:

▢ bag of 90 second rice (I used brown rice)

▢ 1 tablespoon olive oil

▢ 1/2 medium onion chopped

▢ 1 pound ground meat of choice (I used turkey)

▢ 1 red bell pepper chopped

▢ 1 green bell pepper chopped

▢ 1 can tomato soup

▢ 1 can Rotel not drained (you can use regular diced tomatoes if you don’t like spicy)

▢ 1 container chicken broth

▢ spices of your choice (I used garlic, oregano, paprika)

▢ Salt & pepper to taste

👩‍🍳RECIPE:

1. Start by adding the oil and onion to a large soup pot and sauté for about 5 mins. I chop the peppers while the onions are cooking.

2. Add the ground meat to the pot and cook it until no pink remains, using a spoon to stir/break up the meat as it cooks.

3. Stir in the spices and cook for about a minute.

4. Add in the peppers, tomato soup, diced tomatoes, and chicken broth.

5. Increase the heat and bring it to a gentle boil. Once boiling, reduce heat and let the soup simmer for at least 15 minutes.

6. While soup is simmering, cool rice according to package and to the pot and continue to cook the soup for another 10 minutes or so. This will help thicken the broth a bit and infuse more flavor into the soup.

7. Season as needed with salt & pepper.
