Lemon Mayo Prawn
Ingredients:
For the prawn:
12 prawns
50g corn starch
50g flour
a pinch of salt
spring onion
For the sauce:
4TBSP Mayonaise
2 TBSP condensed milk
1/2 zest of lemon
2 TBSP lemon juice
Instruction:
1. Make the sauce, mix mayonnaise, condensed milk, lemon juice, and lemon zest. Let sit in the fridge(thicken the sauce for better coating later) while preparing the prawn.
2. Prepare the prawns. Remove the head, deshell, and then devine.
Combine cornstarch and flour with a pinch of salt and mix well.
3. Take 1/3 of the flour mixture to another bowl and add 1/3 cup of water to form a batter.
4. Dip the prawns into the batter and then coat with the dry flour mixture. Squeeze or press tight the dry flour onto the prawns.
5. Deep-fry the prawns until golden prawn.
6. Coat the prawns with the sauce and garnish with spring onions.
