ingredients
1 stick vegan butter (8tbsp)
1/2 cup sugar
2 tbsp fresh lemon juice
2 tbsp lemon zest
dash vanilla extract
1 egg replacer*
1 1/2 cups all purpose flour
1/2 tsp baking soda
dash plant milk (if needed)
directions:
-in a bowl beat the butter, sugar, lemon juice, and lemon zest together
-add in the vegan egg replacer
-mix in the flour & baking soda
-combine until dough forms & chill dough for 30 mins to 1 hour
-preheat oven to 350°F
-roll dough into balls, then roll them in sugar
-place dough on parchment lined sheet and bake for 11-12 minutes
-let cool before eating & enjoy!
*I used Bob’s Red Mill egg replacer, you can definitely use a flax egg though
