Healthy Chicken + Stars Soup ⭐️

Seriously my new chicken soup go to!! I made mine with sweet earth vegan chicken. This soup came together so quickly and is the perfect cozy winter soup to fight cold and flu season🤒

Correction ˙◠˙ *avgolemono

1. Clean and cut chicken breast into small pieces and sauté with S&P and olive oil. Set aside

2. In a large pot or Dutch oven sauté finely chopped 1 shallot, 3-4 cloves garlic, 1 medium carrot, 1 T ginger. Season with turmeric, S&P. More garlic or onion powder to taste

3. Add 2 bay leaves and 8 C broth

4. Bring to a boil, remove bay leaves and add 1 cup of orzo or star shaped pasta! Cook for 10 min

5. Whisk juice of 1 lemon and 2 egg yolks. Add a ladle of broth to temper the mixture then pour into soup. Cook for 5 more min stirring occasionally so the eggs mix in.

6. Add a handful of chopped fresh dill

7. Taste and season more as needed

8. Serve over a scoop of cooked chicken with extra dill.
