Pumpkin Browned Butter Cookies

Browned butter pumpkin chocolate chip cookies 🎃

Ingredients:

— 1 cup butter

— 1 1/2 cups brown sugar

— 1 egg yolk

— 2 tsp vanilla

— 1/3 cup pumpkin puree

— 2 cups flour

— 1/2 cup oats

— 1 tsp baking soda

— 1/2 tsp baking powder

— 2 tsp pumpkin spice

— 2 cups chocolate chips (save a few to add on top just before baking)

— pinch of salt (if using unsalted butter)

How-to:

1. Brown the butter: Add the butter over medium heat. Stir consistently until it becomes foamy, and then nutty and browned. Set aside in the fridge to cool off for about 20 minutes.

2. Add the browned butter to the brown sugar, yolk, vanilla, and pumpkin. Stir to combine.

3. Add in all dry ingredients: flour, oats, baking soda, baking powder, and pumpkin spice. Fold in chocolate chips.

4. Roll into balls and bake for 13-14 minutes at 350˚.
