Mini jarred ice box cakes : the perfect no-bake summer dessert recipe with coffee whipped cream & layers of chocolate chip cookies!

Whipped cream:

— 2 cups heavy whipping cream

— 3/4 cup powdered sugar

— 2 tsp vanilla

— pinch of salt

— 3-4 tbs of cooled strong coffee, espresso, or cold brew concentrate.

How-to:

1. Beat together all whipped cream ingredients until light and fluffy.

2. Layer the whipped cream with a few crushed cookies, and then let sit in the fridge for at least a few hours until the cookies are soft.

3. Top with shaved chocolate & enjoy!!
