🍏🥧 Apple Pie Cookies — all the flavor of an apple pie, but in easy, shareable cookies!

Ingredients:

— 2 Granny Smith apples, peeled and diced (other apples can work, but you want one that is not too sweet or soft)

— 3 tbs buttter

— 1/2 cup packed brown sugar

— juice from 1/2 of a lemon

— 2 tbs flour

— pinch of cinnamon

— 1 tsp vanilla

— 1 egg

— cinnamon & sugar mixture to top

— 2 layers or premade pie crust

How-to:

1. Check your pie crust’s defrosting instructions to make sure it’ll be ready when you are. Preheat your oven to 350˚.

2. Start by melting 3 tbs of butter with your diced apples. Let it cook over medium heat until the butter is fully melted and the apples are starting to soften — 2-3 minutes.

3. Add in the packed brown sugar, lemon juice, cinnamon, and vanilla. Let it continue to cook 2-3 more minutes over medium heat.

3. Mix in 2 tbs of flour to thicken the mixture, mix well and let it simmer for about 1 more minute.

4. Let the mixture cool slightly, and then spread evenly over one pie crust.

5. Layer the second pie crust — I criss-crossed mine in a lattice, but any style works! I also cut out a few small stars from the scraps.

6. Use a biscuit cutter or a thin glass to cut out the cookies.

7. Brush them with egg wash (1 beat egg with a splash of water) and sprinkle generously with cinnamon sugar mixture.

8. Bake for 30 minutes until the top is browned and golden.
