These soft, bite-sized Lamington Cakes are perfect for a quiet afternoon tea or a special treat to share with loved ones. With their fluffy sponge cake, sweet raspberry jam filling, and a trio of comforting ganache flavors, this recipe is sure to bring a bit of cozy warmth to your kitchen.

Ingredients:

Genoise Sponge Cake:

• Eggs: 180g (about 3 large eggs)

• Sugar: 120g (½ cup + 1 tablespoon)

• Butter: 30g (2 tablespoons)

• Milk: 40g (about 3 tablespoons)

• Cake flour: 115g (1 cup)

Ganache (for 3 flavors):

1. Chocolate Ganache

• Fresh cream: 70g (about ⅓ cup)

• Dark couverture chocolate: 40g (1.4 oz)

2. Strawberry Ganache

• Fresh cream: 70g (about ⅓ cup)

• Ruby chocolate: 40g (1.4 oz)

3. Matcha Ganache

• Fresh cream: 60g (¼ cup)

• White couverture chocolate: 40g (1.4 oz)

• Matcha powder: 1g (¼ teaspoon)

Raspberry Jam:

• Frozen raspberries: 150g (1 cup)

• Sugar: 75g (⅓ cup)

• Lemon juice: 10g (2 teaspoons)

• Or store bought raspberry jam

Other Ingredients:

• Coconut powder: 100g (1 cup)

• Strawberries: 9 pieces

Instructions:

1. Preparing the Genoise Sponge Cake:

1. Preheat your oven at 160°C / 320° F and let the warmth fill your kitchen as you gather your ingredients.

2. In a bowl, gently beat the eggs and sugar until light and fluffy, watching as they transform into a pale, silky ribbon. I usually put the eggs and sugar over a bowl of hot water. It does do job faster. The batter should reach a temperature of 37°C / 99°F.

3. Carefully fold in the cake flour, keeping the batter soft and airy.

4. Melt the butter with the milk, and slowly blend it into the batter until everything comes together in a smooth, fragrant mix. The temperature should be around 45-50°C / 113-122°F.

5. Pour the batter into a rectangular mold, ( mine is 20cm / 8in ) and bake until the cake is golden and ready to fill your home with the comforting smell of fresh baking. Once it’s done, let it cool completely before cutting it into 5 cm (2 inch) cubes.

2. Making the Raspberry Jam: ( you can skip this step if you’re using store bought jam )

1. In a small saucepan, combine the frozen raspberries, sugar, and a touch of lemon juice. Cook the mixture on low heat, stirring occasionally as the berries release their juices and the jam thickens into a sweet, tangy spread.

2. Set it aside to cool, and enjoy the simple joy of homemade jam.

3. Whipping up the Ganache:

1. Each ganache is as comforting as a hug. Start by heating the fresh cream, and pour it over the chopped chocolate:

• For chocolate ganache, mix with dark couverture chocolate until it melts into a rich, velvety cream.

• For strawberry ganache, use ruby chocolate for a soft pink color that’ll remind you of cozy days.

• For matcha ganache, add white chocolate and a hint of matcha powder for an earthy, warming touch.

2. Stir until the ganache is smooth and dreamy, then set them aside.

I usually put the fresh cream and chocolate over a bowl of hot water. Is much easier for me to see what is going on rather then using the microwave.

4. Assembling the Lamington Cakes:

1. Gently cut the cake in half and spread a layer of the homemade raspberry jam on the bottom half. This little bit of sweetness in the center is like a hidden treasure. ( I did cut the top and the bottom thinly. At this point you can also cut the edges if you feel like )

2. Place the top half of the cake back on, and take a moment to admire your cute little cakes.

3. Cut into cubes.

5. Coating the Cakes:

1. Dip each filled cake cube into one of the warm, comforting ganaches—chocolate, strawberry, or matcha.

2. Once coated, roll each cake in a soft dusting of coconut powder, making them look as cozy as they taste.

6. Finishing Touches:

1. For a final touch of sweetness, top each cake with a bright, fresh strawberry.

2. Set the cakes on a plate, and admire how they’re as cute as they are delicious.

7. Enjoy the Moment:

• Store these delightful Lamington Cakes in an airtight container, but they’re best enjoyed fresh. Settle down with a warm cup of tea, take a bite, and let the flavors wrap you up like a cozy blanket. Share them with family or friends, or keep them all to yourself for a special treat!
