i always find myself with too many leftover sweet potatoes after meal prepping for the week and discovered that this recipe is great for using up these sweet potatoes! these sweet potato mochi pancakes are crispy on the outside and chewy on the inside. and the best part, they require only 3 ingredients and are so quick and easy to make as they are pan fried so you do not need any extra appliances 😩

what you’ll need:

290g sweet potato

120g glutinous rice flour

30g sugar

optional: pinch of salt

directions:

cut up the sweet potato into small cubes.

steam the sweet potato till fully cooked and tender (i cooked the sweet potatoes in a microwave using the potato function which took around 3-4 mins)

use a fork to mash the sweet potato till a smooth paste is formed. Add in the sugar and a pinch of salt and combine well.

Add in the glutinous rice flour and combine it till it forms a dough. the sweet potato paste is VERY HOT so be sure to let the sweet potato paste cool slightly before adding in the glutinous rice flour and kneading it with your hands.

Once the dough is formed, divide the dough into smaller balls, around 30g each and flatten them into discs.

on medium heat, heat up some oil in a frying pan and add the dough discs into the pan. ensure that the dough discs are evenly spaced out. after about a minute, flip the mochi pancakes to the other side and let it brown.

Add in a few splashes of water and cover the pan to let the mochi pancakes steam so they are fully cooked on the inside.

(Note: these mochi pancakes burn really easily so do keep an eye on the heat)
