These no bake pumpkin balls are so easy to make with limited dishes and clean up, which is always a plus. As a breastfeeding mama I like adding oats to my diet to boost my milk supply and this is a fun way to do that! This is also an easy recipe you can adjust as you’d like without compromising the recipe. Enjoy with maple syrup drizzled on top with your morning coffee! 🤎

Ingredients:

3/4 cup peanut butter

1 cup pumpkin puree

2 tsp vanilla extract

1/2 cup maple syrup

3 cups rolled oats (more as needed)

2 tbsp pumpkin spice

2 tbsp ground cinnamon

1/4 cup nestle chocolate chips

1/4 cup nestle caramel chips

Directions:

Combine the peanut butter, pumpkin puree, vanilla, and 1/4 cup of maple syrup in a medium-large mixing bowl and mix with a large rubber spatula or wooden spoon. Sprinkle in your pumpkin spice and cinnamon as an added flavor kick. Gradually mix in your oats of choice (I used rolled oats) and add the other 1/4 cup of maple syrup to help it mix smoothly. Fold in chocolate and caramel chips. Chill in the freezer for 15-20 minutes (or longer) to make rolling your dough into balls easier and a little less messy. Use your hands, an ice cream scoop, or a cookie dough scoop if you have it to roll out your pumpkin balls.

Yields ~ 40 balls depending on how small you make them. I like them for an easy-to-grab snack, so I rolled mine to about the size of a ping pong ball!
