save this recipe for your after cny diet 👀
a super quick and yummy recipe that i have on a regular basis on my weight-loss journey! be warned, it might get messy, but it’s so worth it! 🥹
here’s what you’ll need:
• 50g kimchi
• 40g yoghurt
• 1 spring onion, sliced
• 1 tortilla
• 20g cheddar cheese, grated
• 20g mozzarella, grated
• 10 parmesan or hard cheese, finely grated
• 80g cooked chicken breast, sliced/shredded
• some olive oil for the pan
method:
1️⃣ Add some kimchi juice into a bowl, then stir in the yoghurt and most of the spring onion, reserving a little for garnish. Set aside. (mine was pre-seasoned with sesame oil and soy sauce that’s what it was a little oily, recommend to just use the natural juice)
2️⃣ Lay the tortilla wrap in a hot oiled frying pan
and top with the cheeses, chicken and the drained kimchi, cook gently for 2-3 minute until the underside is crisp and golden. Carefully flip the quesadilla (might get messy!) and cook for a further 2-3 minutes.
3️⃣ Slide onto a board, leave to cool slightly then
cut into wedges. Serve with the yoghurt dip and enjoy!
i rate this 5/5 ⭐️ on the taste scale and 3/5 ⭐️ on the after cleaning scale cuz my pan wasn’t non-stick enough 🥲 you could also do this in an airfryer if yours is big enough! 👍🏻
