White chocolate and matcha cookies

If you like matcha and cookies, I have this white chocolate and matcha cookies recipe for you! They are super easy to make, healthy and vegan 🌱

What you’ll need:

- 1 cup flour

- 1/4 cup brown sugar

- 1 tbsp matcha - I used the matcha from @chamberlaincoffee and it was 😮‍💨😮‍💨😮‍💨

- 1/2 vegan butter, at room temperature

- 1 tbsp baking powder

- 1 tsp vanilla extract

- 2 vegan eggs (2 tbsp flaxseeds + 5 tbsp water to mix and let it sit for 5 minutes)

- 2/3 cup vegan white chocolate chips

Directions:

Preheat your oven at 420F.

In a bowl add vegan butter, sugar, vanilla extract and the flaxseed eggs and mix with a mixer on low speed

Mix again until smooth

Add your flour, matcha and baking powder and mix.

With your hands form little cookies balls and place on parchment paper (you can use a cookie scoop!)

Bake for 13 minutes — I always stay close so I can check 🥹
