What you’ll need:
- 2 1/3 cup flour
- 3/4 cup brown sugar
- 1 tbsp matcha - I used the matcha from chamberlain coffee and it was 😮💨😮💨😮💨
- 1 cupish vegan butter, at room temperature
- 2 tbsp baking powder
- 1 tsp vanilla extract
- 1 vegan egg (1 tbsp flaxseeds + 3 tbsp water to mix and let it sit for 5 minutes)
- powdered sugar for topping
Directions:
Preheat your oven at 400F.
In a bowl mix the flour, baking powder and matcha and set aside
In another bowl add vegan butter and sugar and mix with a mixer on low speed
Then add vanilla extract and the flaxseeds
Mix again until smooth
Add your flour little by little while mixing
With your hands form little cookies balls and place on parchment paper
Bake between 10/15 minutes depending on your oven- I always stay close so I can check 🥹
Sparkle some powdered sugar on top 🫶🏼
