Ingredients
2 cans of biscuits (I use grands flaky layer 8 count biscuits)
1/2 cup butter
Berry sugar
1/2 cup granulated sugar
1 tbsp ground cinnamon
1 bag freeze dried fruit (1.2 oz) - I used Trader Joe’s freeze dried berry medley
Caramel
1/4 cup brown sugar
3 tbsp unsalted butter
1 tsp pure vanilla extract
Pinch salt
Icing
2 oz cream cheese, room temp
2 tbsp water
1 tbsp melted butter
1/2 tsp pure vanilla extract
Pinch salt
1 1/2 cups confectioners sugar
Directions
• Preheat oven to 350 degrees. Grease fluted tube pan.
• In food processor, blend entire bag of freeze dried fruit. Pour through strainer to remove any leftover seeds so you get a fine powder.
• Use gallon bag or large bowl and mix together sugar, cinnamon and freeze dried fruit powder.
• Cut each biscuit into quarters and toss into the bowl or bag to coat each piece evenly in cinnamon sugar mixture.
• Add pieces into greased pan
• Melt half cup of butter and distribute over pieces in pan.
• For caramel sauce, heat brown sugar, salt and butter in saucepan over medium heat until sugar is melted. Once fully dissolved, remove from heat and stir in vanilla
• Pour caramel mixture over the pieces in the pan
• Bake for 35 mins, 40 if you like crispier edges
• While that’s baking, combine icing ingredients into bowl and blend with hand mixer until well combined
• Remove monkey bread from pan and flip onto platter
• While still slightly warm, drizzle icing over top
• Try not to eat the entire thing yourself
