Here’s an easy recipe for salmon croquettes:

Ingredients:

• 1 can (14.75 oz) of salmon, drained and flaked

• 1/2 cup breadcrumbs (you can use Panko or regular)

• 1/4 cup onion, finely chopped

• 1/4 cup bell pepper, finely chopped (optional)

• 1 egg

• 1 tablespoon mayonnaise

• 1 tablespoon Dijon mustard

• 1 teaspoon garlic powder

• 1 teaspoon Old Bay seasoning (optional)

• Salt and pepper to taste

• 2 tablespoons oil (for frying)

Instructions:

1. Prepare the Salmon Mixture: In a large bowl, combine the drained salmon, breadcrumbs, onion, bell pepper (if using), egg, mayonnaise, mustard, garlic powder, Old Bay seasoning, salt, and pepper. Mix until well combined.

2. Form the Croquettes: Shape the mixture into small patties or balls, about 2-3 inches in diameter.

3. Fry the Croquettes: Heat oil in a large skillet over medium heat. Once hot, add the patties in batches and fry for about 3-4 minutes per side, until golden brown and crispy.

4. Serve: Once cooked, place the croquettes on a paper towel to drain excess oil. Serve warm with your favorite dipping sauce or a squeeze of lemon juice.
